This is probably a simple recipe to post on my blog, which is why I took a long time to post this. I was in a dilemma if it is too basic but based on the response from my Instagram stories, I figured this recipe might be useful to a few anyway. And come to think of it, this is not the only basic recipe I have on my blog.
There’s this recipe for making Caramel Sauce, a recipe for White Rice in Instant Pot, and even how to hard boil eggs. Although these seem basic believe it or not these recipes are one of the popular recipes on this blog. So I figured, this homemade almond butter recipe will come in handy to a few. Let’s see how to make it.
Raw Almond Butter Recipe:
Nut butter is all the rage these days among dieters and lifters. I have been making jars of nut butter at home since my daughter started weaning even before she turned one; I used to mix it with her favorite rice or millet porridge. Of late, I have been having nut butter for my husband who is on a keto diet.
So basically we go through tons of jars, and it wouldn’t be practical for us to buy from stores. Especially when I can make the BEST almond butter at home for a fraction of the cost and since I know what goes into my jar, I prefer making Raw Almond Butter Recipe or any nut butter for that matter.
It is packed with nutrition compared to peanut butter (read this). Almond butter has high levels of healthy fats, fiber, vitamins, and minerals. It is also rich in calcium making it the superfood of this age. Move over peanut butter!!
What goes into this:
Just almonds. I get almonds in bulk because there’s always almond-based dishes on the way or the other. I make mixed nuts balls for my daughter A which I mix with a bit of ghee and fat bombs for my husband who is currently on the KETO diet. Apart from these, I go through a lot of almond flour to make cakes and macarons.
Anyway, you only need almonds to make this super creamy and smooth almond butter. Any type of dried almonds would do, be it blanched or skin-on almonds. In fact, my personal preference is to use almonds with their skin. It gives a beautiful color and it is ground so smooth you won’t even be bothered about the skin.
How to sweeten it:
I like both unsweetened and sweetened almond butter. This homemade almond butter recipe gives you instructions to make both. unsweetened almond butter. To sweeten it, I use a little bit of honey. Although you can use stevia to make it healthier. Nonetheless, you won’t even need any kind of sweetener because the almonds are perfectly mildly sweet on their own.
For this particular recipe 50-60g of honey works for me. It is not too sweet at the same time it is kind to my sweet tooth. Additionally, not many carbs from sweetening it.
Things to remember before you make homemade almond butter:
Sure almond butter is just ground almonds; it sounds simple when you put it like that but there a few things you need to get it right to make Raw Almond Butter Recipe at home. If you have any further doubts, drop a comment below!
Type of nuts:
Like I said before, any type of almonds can be used. Skin-on or blanched almonds works. With skin-on almonds, you can see the tiny brown ground up spots of almond skin in your butter, but in no way a botheration. Your homemade almond butter is going to be smooth and creamy anyway.
You can use the same method to make any type of nut butter like Walnut Butter, Hazelnut Butter, Pistachio Butter, and even Peanut Butter. There might be slight variations in the timing but the process is pretty much the same.
Roasting the almonds:
Roasting the almonds is an optional step. Almond butter will form eventually even when the almonds are processed raw. But I like the flavor of roasted almonds and the heat in the warm almonds speeds up the butter formation.
Adding sweetener while processing:
When you add sweeteners like honey while you’re processing the nuts, the butter formation will cease and it will take a step back. If you are choosing to sweeten your almond butter, add the honey or sugar or stevia and such after your butter is formed. You just have to mix it thoroughly with a spoon. This is the easy way.
I, however, add the honey directly to the blender. It ceases yeah, but when you keep blending, the butter will come together. It will take a long time though and I do not recommend that you do this until you’ve got the hang of making homemade almond butter.
Blender:
I use a regular 600 watt Indian Mixer Grinder blender. It is a simple blender and it gets the job done. I have seen tips that call for using a high power blender for nut butter, but I have had no problem with mine. In fact, I am going to try making it in a wet grinder just like how cacao is processed. I’ll get back to you on this if it works.
Filling up the blender:
Raw Almond Butter Recipe works when you fill up your blender/ processor halfway only. I am not a food scientist so please don’t ask me why, lol. Of course, common sense would say its because the blades can’t reach the almonds above; but even when you scrape it Nah. I usually fill it with almonds until it is two inches over the top of the blades.
No oil:
If you notice, some commercially made nut butter almost always have added oil. Sadly sometimes its palm oil (hazelnut spreads for example, sadly). But do you see how runny the almond butter is in the photos here? I’ve never needed any oil. You just need to blend a bit longer after the butter forms to make it runny.
Troubleshooting:
Each and every blender has a different power. If yours is on the lower side, it is gonna take some time for the butter formation; in that case, just keep blending.
Serving suggestions:
Needless to say, almond butter tastes so good right by the spoonful. Homemade almond butter is an excellent alternative to Peanuts Butter and a substitute for regular butter. I like to add it to smoothies and popsicles too. Additionally, almond butter can be used in a variety of baking recipes. And of course, spread them on toasts!
Storing it:
It is always, always best to store it in the refrigerator. Since we dont add any preservatives, there is a chance the oil from the homemade almond butter may go rancid. It lasts in the refrigerator for upto a month or more; honestly, it gets over by then in our home.
Diet and allergen information:
A homemade almond butter recipe gives you a great option for VEGAN butter. It is high in protein and rich in healthy fats. Without sweeteners, homemade almond butter is a very keto and low-carb diet-friendly.
Variations:
You can make super cool chunky almond butter. All you have to do it is make almond butter by following this recipe. Then, roast about 50-100g of almonds depending upon how chunky you want it. Let it completely cool down and pound it to rough coarse bits.
You can chop them up (which will give you larger bits) or process them (which might give you tiny bits if you aren’t careful). Add the almond bits to the homemade almond butter and mix it through! Tada!
How to make homemade almond butter in a blender:
It is really easy to make this homemade almond butter. These are the only ingredients you’ll need to make it:
- 350g raw almonds
- 60g honey
This is the method to make it:
- Place a sauté pan on the heat and add the almonds in it. Sauté for about 5-10 minutes on low-medium heat until few almonds begin to darken. It will be hot to touch. Remove the pan from the heat and let it cool down a bit; until it is warm to touch. You should comfortably be able to touch it for 10 seconds or more.
- Add half of the almonds to your blender or how much ever almonds will fill your blender halfway. Pulse it a few times until you get a coarse almond meal/flour.
- Now, blend on medium speed scraping the sides often. It will turn it into a paste-like consistency. You can notice some oil separation happening. Keep on blending until the paste turns into a liquid texture.
- Blend for 5 more minutes to get smooth almond butter.
- Transfer it to a clean and dry cup. Add the other batch and repeat the same process. Transfer it to the same cup. If you choose to sweeten it, add the honey and mix it vigorously with a spoon.
- Transfer the almond butter to a clean glass jar and store it in the refrigerator.

How long can u preserve this?

You can store this in the refrigerator for upto a week or two. I usually finish it off within a week. I suggest you make small batches 🙂 hope this helps.

Made this as per instructions, turned out creamy & luscious. I added 60 g of honey after it was blended. Yuuummm!!
