Egg Pepper Fry | Egg Masala Fry Recipe

Egg Pepper Fry - A simple, quick and spicy egg fry made with hard boiled eggs. Spiked with lots of onions and curry leaves this egg fry is the perfect side dish for any lunch meal!

Ingredients

  • 6 medium Free range Eggs
  • 3 tbsp Peanut oil , or sesame oil or coconut oil
  • 4-5 sprigs Curry Leaves
  • 1 large Red Onion , sliced
  • 1.5 tsp Whole Peppercorns
  • 1 tsp Cumin Seeds , or 3.4 tsp cumin seed powder1
  • 3/4 tsp Fennel Seeds , 1/2 tsp fennel seed powder
  • 3/4 tsp Salt , adjust to taste

Instructions

  • If you have an Instant Pot, boil the eggs in it using this Hard boiled eggs in Instant Pot. If not, boil them in a bowl and follow the instructions in the Instant Pot method for EASY peel. Set the peeled eggs aside.
  • Place the spices in a spice grinder and process it to a coarse-to-fine consistency. If you do not have whole spices, use powders in place of it. (see ingredients)
  • Set a saucepan on the stove. Pour the peanut oil; once it is hot, add the onions and curry leaves. Sauté on high flame until the onions begin to brown. Add the spice powder and salt; sauté for a minute.
  • Make slits all around the hard boiled eggs. Finally add the eggs to the pan and fry it for 5-10 minutes untill the masalas get absorbed by the eggs and the hard-boiled eggs' surface becomes slightly crisp and roasted.
  • Remove the sauté pan from the stove and let it rest for 5 minutes. Serve it as part of meals.

Notes

  • If you don't have whole spices, you can use pepper powder, cumin powder, and fennel seed powder.
  • Grinding the spice powder fresh will add some extra flavor and the spices will be a bit coarse which will add a nice texture and bite to this egg pepper fry. 
  • You can also slice the egg in two. I like to keep the yolks intact so I make slits all over.
