Egg Pepper Fry – A simple, quick, and spicy egg fry made with hard-boiled eggs. Spiked with lots of onions and curry leaves this egg fry is the perfect side dish for any lunch meal!

Jump to RecipeAny fan of eggs will love this easy-to-make dish that comes together in less than 10 minutes provided you have hard-boiled eggs of course. We make eggs pretty much every day, protein, right? Not to mention easy protein source and healthy fat. It is handy to have a dozen easy and quick recipes because let’s face it, plain simple hard-boiled eggs are so boring.

Egg Pepper Fry / Egg Masala Fry
What goes into this?
- Hard-boiled eggs: I use free range eggs, I find that has the best flavor than caged/battery eggs. I like to boil the eggs in my Instant Pot. But you can boil them in saucepan and follow the steps in my instant pot method to get clean and easy peel of the shells. Once it is boiled, make slits all over so that the spice and flavor gets through a bit into the egg whites.
- Spices: Cumin seeds, peppercorns and fennel seeds are the only spices you’ll need for this egg pepper fry but if you have spice powders from the store of these spices you can use the same. Otherwise, you just have to use a spice grinder jar to make an almost fine powder out of these spices. A little bit of coarseness will add a texture to the final cooked dish.
- Other ingredients: A large onion is fried and it gives a wonderful sweetness to this egg pepper fry. I’ve used red onion here, however you can also use pearl onions or Indian Shallots for this. And also, curry leaves is the other ingredient which goes hand in hand in Chettinad cuisine. It adds a nice flavor when combined with the spice powders.

This chettinad egg pepper fry goes well alongside any lunch meals and also alongside any simple maincourse like rasam rice or curd rice.
Notes:
- If you don’t have whole spices, you can use pepper powder, cumin powder, and fennel seed powder.
- Grinding the spice powder fresh will add some extra flavor and the spices will be a bit coarse which will add a nice texture and bite to this egg pepper fry.
- You can also slice the egg in two. I like to keep the yolks intact so I make slits all over.

Egg Pepper Fry | Egg Masala Fry Recipe
Ingredients
- 6 medium Free range Eggs
- 3 tbsp Peanut oil , or sesame oil or coconut oil
- 4-5 sprigs Curry Leaves
- 1 large Red Onion , sliced
- 1.5 tsp Whole Peppercorns
- 1 tsp Cumin Seeds , or 3.4 tsp cumin seed powder1
- 3/4 tsp Fennel Seeds , 1/2 tsp fennel seed powder
- 3/4 tsp Salt , adjust to taste
Instructions
- If you have an Instant Pot, boil the eggs in it using this Hard boiled eggs in Instant Pot. If not, boil them in a bowl and follow the instructions in the Instant Pot method for EASY peel. Set the peeled eggs aside.
- Place the spices in a spice grinder and process it to a coarse-to-fine consistency. If you do not have whole spices, use powders in place of it. (see ingredients)
- Set a saucepan on the stove. Pour the peanut oil; once it is hot, add the onions and curry leaves. Sauté on high flame until the onions begin to brown. Add the spice powder and salt; sauté for a minute.
- Make slits all around the hard boiled eggs. Finally add the eggs to the pan and fry it for 5-10 minutes untill the masalas get absorbed by the eggs and the hard-boiled eggs' surface becomes slightly crisp and roasted.
- Remove the sauté pan from the stove and let it rest for 5 minutes. Serve it as part of meals.
