We all would love to eat some too-hot-to-handle spicy chicken fry once in a while or at least as a DARE. Gobbling it up and gulping down loads of water to cool your burning tongue all the while your eyes are tearing up sounds so much like being tortured but it is fun, lol.
If you are into this sort of spiciness, you’ll love this spicy chicken stir fry. This dish is actually locally called Dynamite Chicken, which does its justice to the exploding spiciness and hotness in the dish. But the good thing is, you can alter the spice level to mildy spicy or even hotter if you prefer.
In our home we aren’t very particular about spicy food; we care about the flavor not the hotness of the dish that being said we can’t eat bland food either. So all in all this puts us in the medium spicy food lovers range. That beign the case we have come to love this spicy chicken fry recipe.

Dynamite Chicken:
The story of how we came about to making this spicy chicken fry recipe at home is really simple; we had it in my husband’s favorite street food style restaurant in a city next to our town. In the eatery, this dish is served as ‘Dynamite chicken’ a name which I think is apt for this dish owing to the extra hot and ridiculous amount of chilli powder that goes into it.
So I had to come back and try this at home and it was a super hit and has been ever since. Funny thing, my daughter likes it too. But at times when we take the spice levels up a notch we remove the batter coating and give it to her. In conclusion, this recipe is great to break the mundanity if there is any.
What goes into this spicy chicken stir fry?
This spicy chicken stir fry is really spicy but like I mentioned it earlier you can alter the spice levels according to what fits as “spicy” to you. That being said you shouldn’t make this dish in the same spice level as you usually consume. It has to be a bit above that.
Simple pantry ingredients go into this dish. Chicken Thighs are the best for this spicy chicken fry recipe. Its because we will be letting the chicken cook for a long time, thighs taste better here. The breasts if used turns out to be rubbery.
Chicken thighs are cut into thin strips to let the batter coat on the chicken Simple ingredients like corn starch, egg, salt and ginger garlic paste go into the marinade. Letting the chicken marinate for a short time like at least 10 minutes lets the corn starch and egg bind together and give a nice thin coat.
For cooking you need coconut oil to sort of shallow fry the chicken pieces. To spice it up, you need some Indian Chilli powder, cumin seed powder, garam masala and salt. You can use paprika powder in place of chilli powder.
Serving Suggestions:
Spicy chicken stir fry can be served in any way you like. Here are some ideas:
- Serve it alongside some cool yogurt sauce
- Or as a maindish with some coleslaw on the side
- Stuff it in tortilla wraps with some lettuce, tomatoes and mayo.

Storage Instructions:
Firstly, this spicy chicken stir fry can be stored in the refirgerator for a day. Secondly, you can store this in the freezer for upto a month. Ensure to put it in an airtight container or ziploc. Thaw before you reheat it. Moreover, you can easily make this dish afresh using frozen chicken; just cut frozen chicken and marinate. Cook for a little bit longer in that case. Variations and Substitutions:
Alternative to shallow fryin the chicken thighs, in fact you can choose to bake them if you are going for low fat diet. Arrange the marinted chicken strips on a baking tray and brush some oil over it. Once done, finish it off on stove with a little oil, the spice powders and then the chicken.
Spicy Chicken fry recipe:
To make this super easy spicy chicken, gather the ingredients listed below and get cooking. These are the ingredients you need:
- 1 medium Egg
- 1 tsp Ginger Garlic Paste
- 4 tsp Corn Starch*, heaped
- 1/2 tsp Salt (for the marinade)
- 8 tbsp Coconut Oil*, or any unrefined vegetable or sesame oil
- 1 tsp Chilli Powder or Paprika, (see notes)
- 1/2 tsp Cumin Powder,(optional but recommended)
- 1/4 tsp Garam Masala,(optional but recommended)
- 1/2 tsp Salt, more if needed
- 1 lb Chicken Thighs, fat trimmed
Method:
- Cut the chicken thighs into thin strips. Put it in a mixing bowl, top it with the ginger garlic paste, salt and egg. Mix it through.
- Next add the corn starch and mix it thoroughly to coat. Cover and let it sit for 10 minutes.
- Place a 12-inch cast iron skillet or any non stick stkilletyou have. Add the oil to the skillet and let it get hot.
- Once the oil is hot, turn down the heat to low-medium. Using a tongs place the marinated chicken strips in the skillet. It is ok to crowd it.
- Cook ihe chicken strips for 5 minutes and then flip each and every strip over to the other side and let it cook for 5 more minutes.
- One the coating on the chicken has begun to brown push the chicken strips to a side. Add the spice powders and salt to the skillet into the oil.
- Stir the spice powders in the oil and then continue to stir to coat the chicken. Once it is coated, let it cook for few more minutes and remove the skillet from flame.
- Use tong to remove the strips from the skillet. Serve it hot!
Notes:
- This recipe serves 4-6 people. The nutrition facts were calculated for 4 servings.
- Oil: The battered chicken has to be shallow-fried, hence you need 8 tbsp of oil. Once you’ve cooked the dish you can remove excess oil by removing the chicken strips from it.
- Corn Starch: Do not use anymore or any less corn starch. Any less will result in an improper coat. Any more will result in a thick coat which will prevent the flavor of chili powder from getting in.
- KETO DIET: This dish is naturally low in carb with only 2.6g of carbs. You can choose to skip or reduce the amount of corn starch from this. For a keto spicy chicken fry recipe, use coconut oil.
- Storing: This spicy chicken fry stays good in the freezer for up to a month and in the refrigerator for a day. But I would advise you to use frozen chicken and make it afresh whenever you want.
- Serve it as an appetizer in a meal or as a main course for the keto diet with some veggies on the side. You can also roll it up in a flour taco or use it in burgers.

Equipment

Ingredients
- 1 lb Chicken Thighs , fat trimmed
