Hello Everyone!

My daughter's playgroup had a 10 day break and she went back to school a couple of days back. I was running behind her all time for 10 days and now I have ample free time. You'd think that I'd be back to doing my routine work in full swing, but I've got a bit a of a post break blues. Probably bored and probably miss having her around.

I would seriously like to keep her at home instead of sending her to playgroup. Provided I had someone cooking super cool meals three times a day for us. Unfortunately, since that's not gonna be the case, I need the 2-3 hours time in the morning to get the house together and cook! It took me two days to get over it, finish my chores and also had a bit of time to make these Oatmeal raisin cookies.

Oatmeal Raisin Cookies easy / Oats Cookies:

I'm not a porridge kinda person; no matter how tasty it is I am not even curious to taste it. The thought of soaking up crisp cornflakes, muesli, granola, etc. and making them soggy doesn't seem appetising to me. No surprise there, I've always been a picky eater. You can assume how I would feel about oats porridge.

I had never really eaten oats until I had them in form of cookies. It was unibic's oats biscuit, I think it was Anzac biscuit. It had a distinctive coconut flavor, the cookies were amazing. And that's how I started eating oats.

And then I came across these Oatmeal Raisin Cookies in proper bakeries and I fell in love! If given a choice I would most likely choose Oatmeal Raisin Cookies over Chocolate chip cookies, ok that's a lie. I would definitely, definitely go for both.

These Oatmeal Raisin Cookies were invented as a healthier option among cookies. These cookies are popular all over in the US, popularized by the famous Quaker Oats. Apparently they had Oatmeal raisin cookies easy recipe on every Quaker Oats carton. That's a pretty persuasive way to make everyone bake it and it explains how these cookies are everyone's favourite.

What makes these cookies special?

Compared to other cookies out there these Oatmeal Raisin Cookies are definitely healthier. And especially for times when need a break from CHOCOLATE. We all love it, but once in awhile other cookies want some attention too.

These Oats cookies are sooo easy to make and every time I share these I get multiple requests for eggless Oatmeal raisin cookies or something that makes it Indian. I'm surprised as to how many people don't want to bake with eggs even those who eat eggs in curries. Probably they can smell eggs? I'm not sure. But trust me it doesn't smell eggy because it has a hint of cinnamon which makes this smell and tastes delicious.

How to make these cookies:

Heat about 25ml water to a gentle simmer. Add the chopped raisins to the hot water and set it aside until needed. Alternatively, you can soak the raisins in the same amount of 25ml of rum and let it soak for at least 2 hours.

In a mixing bowl, add 75ml coconut oil and 90g brown sugar. Whisk it together.

Add 1 medium egg and ยฝ teaspoon Vanilla Extract. You can use 1 teaspoon vanilla extract if you like. Also add ยผ teaspoon of Cinnamon Powder. Whsik them all together to break up the eggs and slightly gets pale and frothy.

For the dry ingredients, in a separate bowl mix together 70g All-purpose flour or wheat flour, 1 pinch of salt, โ…› teaspoon Baking Soda. Stir and combine it.

Add the dry ingredients to the wet ingredients and fold using a spatula. Once the flour has been absorbed into the wet ingredients, add the oats and mix it until visibly blended in. Finally, add the chopped and soaked raisins to the cookie dough. Give one final mix.

Cover the bowl with a cling wrap and refrigerate for 30 minutes. Line a baking tray with parchment paper. Preheat the oven at 170 C for 10 minutes.

Bake for 10 minutes or until the sides begin to turn golden brown. Remove from the oven and move the cookies to a cooling rack.

Serve with a glass of milk!

Notes:

  • Coconut oil adds a distinctive aroma and flavor to the cookies. But you can also use any vegetable oil you like.
  • The raisins disperse well in a cookie when they're down to bits. For this, you can chop it up into small pieces. Also, seedless raisins will be easier to chop it.
  • For a comparatively smooth cookie, you can choose to powder half of the oats.
  • These cookies are best when stored in room temperature. It hardens when stored in refrigerator.
  • Stays good for a week in room temperature

Equipment

Ingredients

  • 50 g Seedless Black Raisins , chopped into bits
  • 25 ml Warm water

Wet ingredients:

  • 75 ml Coconut Oil
  • 90 g Brown Sugar
  • 1 medium Egg
  • ยฝ teaspoon Vanilla Extract

Dry Ingredients:

  • 70 g All-purpose flour / Whole-wheat flour
  • ยผ teaspoon Cinnamon Powder
  • โ…› teaspoon Baking Soda (approx. 1 big pinch)
  • โ…› teaspoon Salt (approx. 1 big pinch)
  • 150 g Oats

Instructions

  • Soak the chopped raisins in the warm water for 10 minutes.
  • Add the oil and sugar to a large bowl. Using a wire whisk mix them together.
  • Add the egg and the vanilla extract to the bowl. Break it up and whisk for a few minutes.
  • Next, add the dry ingredients to the wet ingredients excluding the oats. Fold it in.
  • Finally, add the oats and raisins. Fold and mix until completely incorporated. Cover and chill in the refrigerator.
  • After 30 minutes, remove the cookie dough from the fridge. Preheat oven at 180 C for 10 minutes. Prepare and line a baking tray.
  • Make even sized balls out of the dough. Place them on the prepared pan. Flatten them until about ยฝ inch in height.
  • Bake for 10 minutes or until the sides are golden brown. Remove from the oven and move to a wire rack; let it cool down.
  • Serve it with a glass of milk!
